In years past, I remember flying into Vegas {as we did all the time to get to our test work down in Kingman}, I knew where to look and on the Vegas approach, I could look south east from the plane and see Humphreys Peak standing tall way over by Flagstaff....

I've got lunch ready now.   Going to make today Mexican Fiesta DayOn today's menu:

1.  Tacos
2.  Beef & bean burritos
3.  Beef burritos enchilada style
4.  Tamales (both mild and hot)
5.  Quesadillas
6.  Spanish rice

There is also some southwest versions of all the above mentioned items. 

Also, the desserts for today:  chocolate cake, cherry cheesecake, and the following cobblers:  apple, blueberry, cherry, peach.

Dale, the robins have been waking me up about 5 a.m., about 20 minutes before the alarm goes off!  And we all survived April Fools just fine.  (Although, I think Sarah managed to get Walt with an April Fools around 9 last night!)

CW, I love Mexican food but have a difficult time finding "authentic' in AZ. Too many sissys have demanded that it be mild. I like mine smothered in Green chili sauce. I even have a bottle of Tabasco green pepper sauce which is added to many dishes on my table, but my friends whence every time I take the lid off.

I shall enjoy your selection, and I hope you and our other Railroaders won't mind if I bring the Tabasco along to 'sweeten' it a little.

Jack, no problem!  That's why I put out bottles of hot sauce, and anything listed as HOT, so those who like more hot spicyness(sp?) to their plates, can add it!

One of the items requested during development of the military "Meals, Ready to Eat" (MREs) was Tabasco sauce.  The problem is, it doesn't store well in mustard and ketchup-type packets.  So each MRE (at least those where it's appropriate) contains a tiny glass bottle of Tabasco sauce.  Cute little things!

  Tree - the Driver got one at a food service meeting and it is sitting on top of my office fridge.  You are right - it is cute - and very green!

Hope that AZ Mexican Food has red or green salsa instead of the unidentified brown ooze so often seen in KanzassBig Smile [:D].....Oh, how I miss El Camino in La Junta, Pablo's in Pueblo, El Rialto in Las Vegas NM, Sanitary Tortilla Factory in Old Town Albuquerque or Maria's Kitchen in Santa Fe. (better be ready to sharpen the cactus needles, drain the moat and starve the alligators down there in about two weeks.) - They leave the seeds in for you too, Si?

Muddy One,

There is a place in Santa Rosa, NM that has been in the same family since WW II. It is on the Hwy. toward Vaughn; you know, that famous SF crew change point. Well that was before you youngsters came along with your sophisticated surveying instruments and high rail vehicles. Try it for Mexican if you are nearby.

Oh for Chains, transits, plumb bobs and wye levels that came just after the dinosaurs were exterminated by we tough surveyors who were issued side arms and rifles. Well maybe that was Ray Morley and Lewis Kingman instead of yours truly.

In La Junta I still go to El Azteca on west 3rd. Pete Saminego always knew some good places but he was probably retired when you arrived. But I bet you heard some 'Pete' stories. And I can tell you about the Brown Hotel in Springer or the Ark Valley Hotel in Syracuse which was where Les Phillips liked to stay. Anyway you young softies will never have the motor car stories and the less than desireable places where we found a meal, so enjoy the 'good life'

Yes Q, Lewis Kingman was a renouned Santa Fe locating engineer. He also has the town of Kingman, KS named for him. It was on a SF predecessor, The Wichita and Western.

Ray Morley was the locating engineer who, disguised as a sheep herder, observed the Denver & Rio Grande engineers surveying Raton Pass and subsequently was involved along with SF Chief Engineer A. A. Robinson in beating the Rio Grande construction crew to claim the Pass. Morley was also instramental in Santa Fe getting control of the Royal Gorge west from Pueblo. But SF eventually lost that one in litigation.

Robinson, Morley and Kingman along with several others (like Henry Holbrook and Dick Colman) are famous in the history of Santa Fe's location that is now known as the TRANSCON and have towns or stations named for them.

Good Thursday morning, everyone!  Well, the rain hasn't started here yet, but they're saying it's on the way.  We will have a flood watch in effect later on this  morning, going through tomorrow night or Saturday morning.  They say our area could see about 4 inches of additional rain.  Which means the guy who cuts our grass, won't be able to until next Saturday.  I know the old saying "March winds bring April Showers, which bring May Flowers", but we've seen too much rain already, as have a whole lot of people in other areas.  I'm just glad this coming in isn't snow!! 

Coffee is through brewing, and fresh juice is now cooling in the cooler, and extra in the fridge.  On the breakfast/warmer bar this morning:  breakfast burritos filled with scrambled eggs, turkey bacon, ham, cheddar cheese; bagels, bear claws, and home made hash browns.  

Everyone have a great morning, stay warm and dry this morning, if you're in the rainy region, and enjoy your breakfast!  Mookie, I'll be out in the garden, if you'd like to join me.

Thanks CW, I could use a good cup of java this morning after a long day yesterday...I am in Wisconsin and can't help with the cooking but how about I bring a box of fresh danish from the local Hartford, WI bakery down the street for all of us to share?

Jack.....just from my observation of how he brought the Sante Fe from the Yucca Flats {desert}, up, around the edge of the range of hills to attain the elevation of Kingman seems to have done a good job.  Probably wasn't an easy task.  But it is quite an elevation climb to get up there and then on out across the territory headed east and on up to Flagstaff.

Jim, thank you so much for your contribution this morning!!  I seem to be on a "sweet diet":  I keep wanting sweets, of any kind, though I'd love to have some more chocolate, than I currently have on hand, here at home (which is nothing chocolate in the house!).    I'm going to have to rectify that!!!!

Mookie, I really enjoyed our visit this morning.  Thank goodness, the rain held off until we came back inside!! 

Since yesterday was Mexican Day, today is Italian Day.  On today's menu: 

1.  Italian spaghetti w/meat sauce, garlic potatoes, and your choice of:  garlic bread, garlic Texas Toast, or parmasean cheese bread.

2.  The following pizzas:  Pepperoni/mushroom, Anchovie, Italian sausage, Hawaiian, and Supreme. 

Now, I'm headed to the laundry area, and take care of that dreaded chore!!

Mook, it's at least made it to here.....about 55  degrees and 3/4" of rain in the gauge.

Good evening everyone. I am just back from five and a half weeks in the hospital. My last entry here was on 25 Feb and I mentioned that I had the miseries. It turned out to be something more than the miseries.... Anyway, I missed all of you and one of the first things I did was to come to this forum!. My room overlooked the CSX A line, but due to circumstances, I could only listen to them blow for the crossing. Good to be back
