Pat, that South Beach Diet allows some cheese but I have to watch out for fat in some of it.  I have been using a non fat cream cheese on toast in place of butter for breakfast and it's not bad.  They also have something like mashed potatoes made with cauliflower which isn't bad.  You just cook it and mash it up and it almost looks like potatoes but no carbs.  I need to get back to oatmeal too instead of  dry cereal.  The old fashion oatmeal is best because it does not break down in your body as fast which takes more time to get in the blood stream.  I could use one of those "full life" doctors.  I use sugar substitutes in coffee or tea.  I have been eating a lot of cucumbers for snacks and a few low fat cheese sticks.  Apples are good for my sweet tooth also.  That cheese without macaroni dish you mentioned sounds interesting.  This morning I had a nice omelet made with egg beaters using some left over ham diced up with green onion and a little bell pepper.  Then I sprinkled a little shredded cheese on top but not too much.  I diced up some tomato over the whole thing.  It was really good and pretty low in fat and carbs.  I'll figure it out eventually,

Ray, you are defiantly on the right "diet" track. My wife Laura uses  cauliflower in her no potato potato salad, her no mac mac & cheese, and some others I can't think of. I'll suggest your cauliflower mashed potato. Apples satisfy my sweet tooth too.

Your omelet sounds great. I am sure you can buy sugar (carb) free cheese.

The "full life" doctors are listed on line as Dr. of Functional Medicine or Dr. of Integrated Medicine.

Sure hope all this weather stuff is over !!

There has really been a lot going on since the first of the year!  Range fires, tornadoes, floods, etc., etc., and just within this country.  Much less the earthquakes, and tsunamis.

Still flashback on York trip, but that Scrapple stuff always come to mind, Yuk.  Havn't gotten to do the layout mods I've intended on, need to get a few "Honey Do's" taken care of first.  And its just giving me more time to think things out a little further. 

Getting the yard ready for summer, putting up the patio lights, servicing the pool, and a general clean-up.  Havn't talked to Glen much since got back from York either.  I think he has a lot that was rescheduled so I'm sure he has been rather busy.

Regarding all the diet stuff, I too believe moderation in what you select and eat.  So I have found that if I eat dessert first, than that curbs my apetitie and I don't eat quite as much. 

Obviously, someone like Buckeye would find issues with all the health food topics, look at all the Birthday cakes he gets!!

Good Mornin' Ya'll From Sunny Taxachusetts,

Sunny and 70 on tap for today.  Weather for our monthly "Burger Night" gathering tomorrow night calls for clear and 60s....so I won't be grilling in the rain!!!!  Confirmed guest list now at 35, and we are going to sneak in a surprise birthday celebration for one unsuspecting attendee.  I wound up relenting this week and buying a new LP gas grill for the occasion.....the old Weber Genesis soldiered on for 11 years but reached the point where the cost of needed replacement parts made an R&R an unwise financial choice.  We use the grill year around, so we really get a good bang for the grill buck.

MikeC......glad to hear you are continuing to make progress with your folks things.  I can appreciate the emotional toll.....cannot tell you how much that the stimulated fond memories of certain pieces from my folks accumulated junk caused me to delay getting rid of it, stuff that sat in their garage, basement, and attic gathering dust and was actually unwanted for decades.  Except for toy trains, you can only have so many treasured "keepsakes."   

RaySP......continured prayers for your leg recovery.  Like you, I have been on a roller coaster ride with weight and test results. 

SJ......was glad to hear your recent pit stops at the doctor's and the dentist's were relatively uneventful.

Regarding the food and health topic.....good stuff.  OK, I still look pregnant, but less so.  In the past 18 months I have taken a rather unscientific and unstructured approach.....the addition of moderate but consistent exercise, intake moderation (portion control, no measuring, a portion is the size of your fist), sensible but satisfying substitution, increased strategic water intake (like 16-24 ounces 15-30 minutes before each meal), avoidance of deprivation and guilt, patience, and a scale placed in a conspicuous place.  Smile, Wink & Grin   

Weightwise, I am now about 13% higher than what I weighed in for college sports my senior year 40 years ago (was about 25% over), my body mass index has been falling, and my test levels have been dropping in the right direction.....just not fast enough for my doctors' tastes as others have experienced and noted here.  If medications help one get to their target test ranges faster, I think one should take them.  That is my next move.  No weapon in the arsenal should be discarded off hand.  For me, slow and steady wins the race.    

When one is younger, more active, and the metabolism is working for you, it is quite easy to overindulge on a lifestyle basis and get away with it, around the waistline and on the test charts.  Not so easy when one passes 45-50.  I don't know a single person in my lifetime who has dieted successfully (pick a diet, any diet) over the long haul (lost weight and kept at least 50% of it off within the first year of the lowest weight achieved) without exercise and a permanent eating lifestyle change.  Having a partner (my wife) in this lifestyle change helps me to keep things sensible, effective, yet satisfying and moving in the right direction. 

There has been a lot of valuable discussion here about cholesterol, fats, carbs (good and bad), sugars (good and bad), and various diets.  For me, diabetics are a solid source of advice when it comes to all of these things.  They seem to be the most effectively educated at giving me the Cliffs Notes version for weight, good nutrition, and the best food and beverage substitutes (brand) that taste surprisingly good.......so I don't have to try experiment with all of the stuff that is out there for healthy content and good taste.  I find myself missing almost nothing.  By the same token, I will indulge, just not daily.  Laugh

Couple of really long days here at the 'scope. Working a schedule for the next few weeks which is not exactly conducive for sleep.

We had our first fires for the season last week. One was relatively low on the mountain and the other was in an area that had burned a few years ago. We did not get a lot of snowpack this winter.

Not a whole lot else I can think of at the moment. Looking forward to finding a pillow.

  Nice here today starting out at 57 and going up to 65 nice.  Heading out to PITTSBURGH this morning to the NRA SHOW.  Me and BRO were there 6 years ago and what a great show.  4.5 acres in the Convention Center filled with guns and the latest in shooting supplies.  Coming home tomorrow.

Pat, It seems that most doctors treat the symptoms not what is causing the problem. After about 5 visits it is off to a specialist and into the loop of tests and the "specialists CYA themselves".

Finally some dry weather in SE Indiana but cooler.  Loaded junk furniture from dad's place out for heavy trash pickup.  Went to a hospice memorial event for dad as well. Good day at work.  Regular fare for breakfast.  Four day weekend coming up.  Need it .  TBIL and I can drive.  I hope everyone has a good day.

Got a print from TW of Texas (Roy, you know those people?)  $10 shipped, Lionel, 110 years of Christmas Tradition...something to that effect.  I like it.  Copies of that were in the NYC store during the Holidays ( a small birthday present to myself).

Good evening guys,

To add to the diet discussion, I have been on Atkins since about the middle of January and have lost 23.5 lbs.  Atkins has changed some over the years and is now a pretty good diet, I think.  One thing I want to mention.  Most of the low fat foods are loaded with carbs to they do nothing in the battle to lose weight.  For me this is the best diet I have ever been on as I don't feel hungry all the time, but do lose weight.  After the first few weeks it is slow, but about a pound a week.

Now for the train news.  I just ran the two tinplate trains on the inner loops and everything worked perfectly.  These are the two that I expect to run on the proposed Christmas layout this year in the living room, first in many years.

We did not get any wind or rain damage, but some of both within about 15 miles of us so we are very fortunate and thankful.

Did drive through some very nasty rain this morning to meet a friend for breakfast, the 4-lane traffic slowed to about 35 mph for a time.

I have started on doll house no. 6 for granddaughter no. 5.  (Did a small one for one of the daughters for a coffee table display.)  This one is scheduled by Christmas.  Yes I am a slow builder.

Hope everyone else survived the nasty weather with no problems.

Not so much low carb, I had to give up the half & half in my coffee and drasticly reduce the use of butter and red meat. Lots of grilled boneless skinless chicken b_r_e_a_s_t. After bringing it down I'm kinda following a "maintenance" diet w/regards to butter and red meat but half-n-half is still verbotten. Easter was an exception of course, after cooking that big 'ol rib eye roast I just had to cut me a big thick slice of med rare. Of course I did cut the roast off the bone before slicing, wrapped & in the freezer so they can be slathered in sauce and put in a low oven next week. Dinner

I see b_r_e_s_t worked, no deletion! Did you know half-n-half has less sugar than whole milk which has less than 2%? No carbs in the rib eye roast. Those bones  make great soup.

Pat, AF Ray , Doug and others, thanks for the comments about the blood work.  Pat,  I know you are right.  I was on the South Beach Diet once and it did bring the numbers down.  I fell off the diet wagon when my leg started acting up and I did not feel like walking much.  Then I went nuts on eating the wrong stuff so now it's back to the straight and narrow.  First priority starting yesterday was no more ice cream.  I'm also watching fat content in everything now and have gone back to egg beaters for breakfast.  I want to do a lot more walking as soon as I can.  Thanks guys for the encouragement.

South Beach is a good diet, but even they add some sugar and starches to some recipes. Did you know there are 40+ ways of labeling sugar, just to snooker the public? You eat sugar and don't know it.

I don't recall your specific leg problem, but I had a cramp problem at night with both legs until our Functional MD told me to take Magnesium, a product called Calm. Cleared it up in less than a week.

We don't pay attention to fats or salts. Did you know there is no sugar in eggs, and you can get sugar free bacon and sausage? And sugar free pickles, creamy salad dressings, mayonnaise, lunch meat and more?

Sorry to keep getting up on my soap box, but we are passionate about our results.

To be continued....   S.P. man; my 2cents, do not eat anything with peanuts in it; made a difference with my try's big time. Hey Pat:   Great news on your low carb diet, congas to you and yours. While we are on the subject, wifey tells me about this here Caveman diet. You can eat anthing the cavemen ate when they were around, except agricultural grains, which did not occur until about 5000 years ago. That means no pasta, no bread, no beer etc. I guess you know by now were we're going with this diet. So I tells the bride, aren't you always telling me stop eating like a caveman, you're too fat and your pants don't fit!!  Make up your mind already!      Laugh    later.

Pat what is a true low carb diet? I've been struggling with high Triglycerides for years. As well as taking metformin for Glucose


Banks:

In a True Low Carb diet you eat nothing with added carbs like sugar or starches. Only the sugar occurring naturally in fruits, vegies. No carbs in meat, fish and poultry.

Their are lots of so called low carb cookbooks out there, but every one we have seen use some added sugars in some of their recipes.

A true low carb diet tastes a lot better then it sounds. Recipes for pizza (no Flower), potato salad (no potato),  Mac and cheese (no macaroni), meatloaf (with sugar free catchup). Even have a sugar free BBQ sauce.

If you can correct the bloodwork thru dietary changes go for it, but with the help and support of the family doc. I couldn't handle the cholesterol pills, falling asleep all the time and just dead on my rear when awake, so I made a drastic dietary change and lots of walking, 10 to 15 mi/day three days a week. Bad cholesterol went from almost 400 to less than 200 in 5 to 6 weeks, w/o the pills.

Museum tomorrow so need to figure what I'll be taking to run.

Way to go Doug!  Diet and exercise go hand in hand.

As to the family Doc, our opinion after many years of going to one Doc after another (we call them Conventional Doctors), it wasn't until we found a Functional Medical MD that we changed life style, lost weight, gained lots of energy, Etc. Functional Doctors treat the whole body, not just what ever you complain about.

Dennis - you have an opinion?

Was your drastic dietary change a change to a low carb diet?

SJ - Two words - CHANGE DIET! I am serious. Need Info, I have it.

Pat, AF Ray , Doug and others, thanks for the comments about the blood work.  Pat,  I know you are right.  I was on the South Beach Diet once and it did bring the numbers down.  I fell off the diet wagon when my leg started acting up and I did not feel like walking much.  Then I went nuts on eating the wrong stuff so now it's back to the straight and narrow.  First priority starting yesterday was no more ice cream.  I'm also watching fat content in everything now and have gone back to egg beaters for breakfast.  I want to do a lot more walking as soon as I can.  Thanks guys for the encouragement.

Pat what is a true low carb diet? I've been struggling with high Triglycerides for years. As well as taking metformin for Glucose
