Mike , no change yet, but Beck is getting some better. Going to be a long time before normal.
The sad part is, this is almost normal for here anymore it seems like with grandkids being round anyway.
We drove up by Cleveland Oh.[we have a daughter there] one time, when one of the kids got hurt and was in the hosiptal. she was out and home before we got there, 8 hours laters. Oh well, it was a nice visit for a couple days.

I keep saying we're moving to another state and not leaving a forwarding address, but I know the wife won't go

5:25am and guess what? That's right, it's still raining, 7 hours now of heavy pouring rain. I wonder how high the lake is gonna come up. One of my neighbors has already had to leave her home. I don't have to worry too much on that account, being that my home is 30+ feet above lake level, I do however have tp worry about the roads out as they are on lower ground and have been known to get flooded up to 6 feet. Guess it's time to get the Zodiac out of the closet.

It was Chicken and Sausage Gumbo recipe. Here it is:
 

Chicken and Sausage Gumbo

 

Yield: approx 3 1/2 gallons, or about 36 12-ounce portions

 

Ingredients:

 

½ lb                 butter

½ cup               olive oil

1/3 lb               flour

3 cups              onions, large dice

3 each              green bell peppers, large dice

1 stalk              celery, large dice

½ cup               garlic, minced

2 lbs.                Smoked sausage, sliced 1/3” thick

2 whole            chickens (4 lb. avg. each), washed and drained

2 cans              tomatoes, diced

1 can                tomato paste

2 lbs                 Okra, ½” cuts

2 gallons           chicken stock, cold (approximate measurement)*

2 tbsp               Italian spice mix

2 each              bay leaves

1 tbsp               Worcestershire sauce

½ tbsp              hot sauce

salt                   to taste

pepper             to taste

 

Procedure:

 

  1. Rise and drain the whole chickens, and discard any large pieces of fat, then place the whole chicken into the bottom of a 4 gallon (16-quart) or larger stock pot. If the gizzards, heart, liver, and neck are provided, add them to the pot as well. Pour the chicken stock over the whole chickens to cover, use only enough stock to completely cover the chickens*. Then place the pot on the stove top on turn heat to high. Bring to a boil and then reduce heat to a simmer. Continue simmering chicken for 1 ½ to 2 hours or until chicken meat is easily pulled from the bone.
  2. While the chicken is simmering prep the onions, bell peppers, celery, and garlic and set aside.
  3. Heat the butter and olive oil in a separate large 3 gallon (12-quart) sauce pot and whisk in the flour to make a roux, continue heating on medium high heat and continue to stir with a wooden spoon until a dark roux is made. Once the roux has reached the dark stage add in the sliced sausage. Stir well and allow the sausage to brown well with the roux. Once the sausage is browned add the chopped onions, celery, bell pepper, and garlic and stir well to incorporate. Sauté all this on medium heat until the vegetables are soft.
  4. Once the chicken meat is falling off the bone remove the whole chickens from the stock with a pair of long tongs and transfer the chicken to a large bowl. If desired remove the gizzards, heart, liver, and neck with a slotted spoon. Allow the chicken to cool then remove the meat from the bones and break the meat up in to large bite size pieces. Discard any skin and fat.
  5. Transfer the sautéed sausage and vegetable mixture to the warm chicken stock and stir well to smooth out the roux. Bring to a boil, and then reduce heat to a simmer. Simmer for 30 minutes and then skim scum and fat from the top of the liquid with a ladle.
  6. Add the tomato product and stir well. Continue to simmer for 30 minutes.
  7. Skim scum and fat from the top of the liquid with a ladle.
  8. Add the Italian seasonings Worcestershire sauce and hot sauce and stir well
  9. Add the okra and stir well. Continue to simmer for 1 hour or until all stringiness from the okra is gone.
  10. Gently fold in the boneless chicken meat pieces and allow to simmer for about 10 minutes.
  11. Season to taste with salt and pepper.
  12. Serve with fresh cooked white rice.

Thanks Jeff, that is the one I made at home this past Saturday. We ate on it for four days and ended up giving away about a gallon of it to the neighbors and some co-workers here. And then froze about another gallon of it on Wednesday. Of course the quantity can be cut in half easily, I just make it in big batches so we can save some for later.

Yeah, half the fun of big-pot cooking is getting the aroma all through the house.  That doesn't go for lobster, though.  That's an aroma that's best left outside.  And speaking of aroma, I could do with some hops and barley about now.

A few months back, I added a siding to act as a caboose track.  I was never sure about it, because it faces the other way from the rest of the sidings in the yard, and switching in the caboose to the end of the train just didn't seem to work well.  Last night, I was putting together a train.  For a change, I left the S-1 on a siding in the yard and pulled the Alco RS out of the roundhouse to make up the train, and then take it for a spin.  When I got to the point where I was ready for the caboose, the answer was right in front of me.  The S-1 was perfectly positioned to go grab the caboose and tack it on to the end of the train.  Even the uncoupling magnets were in the right place for the delayed uncoupling and then the push to hook it up to the outgoing freight.

I could never have done this without the wisdom imparted from a couple of beers earlier in the evening, so I guess I'll have another.  A toast, gentlemen (and ladies, if any present) to The Caboose.

Sounds like a good gumbo! I've been stuck (in the rut) trying to do a good gumbo and have now done a numer of them...That I like!

Jeff: Wow! Talk about rain!! I thought we were doing good (and we were) geting three to four days of rain and snow, helping with our moisture levels....You guys are geting a downpour...Hope it's not flood levels!

Just a few more weeks of swim team...than I can get going, as most of you already have, working on the railroad! Can't wait...

Gotta' head back to town...One more session at the pool this afternoon.

Yeah, we have been getting a lot of rain here in Louisiana. The lake is up quite a bit but the flood gates are open so it should go down rather quickly. I'm sure the fishermen will be complaining abouts the gates. My parents were ready to leave their  home and move into the RV if need be. Fortunately the rain stopped this morning and we'll be getting a break for about a week according to the weather guesser.

Mike, I don't need a boat here. I'm 30+ feet above lake level. By the time it could even start getting this high, the dam would long gone and the lake would no longer be a problem. I used to have mud issues in my driveway, got a dump truck load of gravel dumped on it. That solved that problem.

I'll have a Scotch on the Rocks, maybe two if time permits. Well... it's been a busy week and I'm still not through the seven piles of paperwork on my desk, 3 projects to quote and enough issues in the office to choke a horse. Maybe you should just leave the bottle.

Anybody know anything about Howard Zane's book "My Life with Model Trains"? I'm thinking of ordering it, but it's a bit pricey.

I heard from my LHS that my 0-6-0 is in.  I'd have gone to get it today, but it was my little girl's last home field hockey game of the season, and the weather was beautiful, so I wanted to go watch the game.  Danged if I can figure out all the rules, but our one great scoring chance, a shot that missed by an inch, was a one-time blast by my Annie herself.  So close.  Well, maybe next game.

I'm not feeling 100% tonight, sore throat, out of sorts and achy..."Hot Toddy" sounds like a good place to start and a place to go this evening.

I've got a long week-end off, so I'm hoping to feel better, REAL soon! If so, I'll head for Whispering Wings (the cabin, over by Itasca State Park) to do a bit of duck hunting, keeping the fire warm and some cooking! All should be good, if I feel better....Soon!

I really need to take a mini vacation...I'm getting overwhelmed with demand! Shooting a few holes in the sky...And maybe a few ducks to... to put in the freezer (or eat fresh at duck camp) will be a good prescription for the head!

Then, sooner or latter...I can get back to the "real' world of the CCRY!

It looks like we have a week or so of dry (mostly) weather coming. The lake has gone down about 6 feet now, still receeding.

I'm over thirty feet above lake level, so that was never really a danger. Besides, most of the gators are at the other end of the lake. Once in a while, we'll see one here, but it's usually captured quickly and tranported back to where it belongs. The highest the lake has ever come up is 11 1/2 feet, that was in December of '82.

   Well it finally happened, My dad just came out about 15 minutes ago and told me that my grandmother has died.   Not really a shock she has been in the rest home for over a year with cancer eating her alive, she is finally resting peaceful now. I am sorry to lay this on you but I guess I needed to unload.   My dad went to the rest home to be there with my mother who was with my grandmother (Granny) and I am here by myself, I just needed to talk.   Later.     Mike

I picked up my 0-6-0 today.  It's a beauty of an engine, but as we all know, steamers will find the little problems with your trackwork.  I've got two spots that haven't caused a bit of trouble with anything else, but this little guy just can't pass by without hopping the tracks.  Yeah, the kinks are visibly there, but I thought I'd had them "good enough."  I guess not.  It's my first sound engine, and boy, does it make all the others look bad.  Fine engines, mostly, but they're so dang quiet.  <sound of cell phone ringing.>  Well, that was quick.  I've gotta go pick up my daughter at the football game.  It's too cold for teenage girls (yeah, the same ones who will be out waiting for the bus in skirts and tank tops in January) so they've called for a dust-off.

Put the nachos on my tab anyway, Joe.  Eat hearty when they come out, guys...

Time for a quick one before closing time tonight.  The gaggle of teenage girls ended up at our house.  We don't mind, because we know it's a safe place, and we know who they're with.  They usually take over the family room, so I had planned to work in the basement, painting the pipes on the loading rack of Mr. Burns's fuel oil company.  Instead, they let me have the family/train room to myself, so instead I massaged those weak spots in my trackwork and got the little 0-6-0 running all the way around without a problem.  I've still got a spot down in the yard that's doing something weird, shorting out when the engine crosses the turnout down to the roundhouse.

Actually, I was kind of surprised that it will just barely fit on the 9-inch Atlas turntable.  I thought it would have a reserved spot in the stall directly across from the lead, so it could back in and cross the table without having to "sit and rotate," but now I can put it anywhere.  The rain has stopped, though, so I think I'll leave it outside for the night.  The roundhouse is full of very quiet Geeps, anyway.

Not much going on here  as far as MRR'ing, my moms in the hospital from a heart attack. She'll be ok and should get to come home some time today.

Mike,, sorry to hear bout your grandma, we'll keep you in our thoughts. We lost my grandma 8 years ago on Mermoral day. That was rough, she was the last of my grandparents.

Mr. B ,,,, ya know some of the greatest ideas, just almost hit ya in the face after a coulpe barley pops.
I remeber the days of teenage girls being at our house for sleep overs and such. Also the boys trying to pull some kind of goofy  trick on them or the other way around at times.

JB ,, hope your feelin betters, and the hunting goes well sounds like fun.

I'm going to try to get some work done on the layout today. A general pickupo of things which shouldn't be there followed by sealing the surface of the drywall compound with shellac. After that's dry, a coat of brown paint followed by green in areas where foliage will go down. I'll then give Dave Volmer's sloppy method a try.

Good Morning All... I'll have a coffee and a couple peices of toast to start off the day. Gotta go over to the Lawn Bowling Club at 9:00 this morning and help with prepping the greens for winter. Never done this before.... involes sand, shovels and wheel barrels. My guess is I will be on the end of one of the wheel barrels. We've got two greens to do.... so I guess we will be there most of the day. If time permits I will go to the Woodstock Model Train Show.... if not I will go tomorrow before we go to an Introductory Curling How-To Clinic.
