"It's me and I'm in love again!" Good morning. 77 and dense fog in Carolina this morning, headed for 94 and more thunder. Who can identify my opening line? Be first and win 3 weeks in beautiful scenic downtown  Effingham, SC, home of the county jail. Offer not valid in some states or Venezuela. Paula, steak and peach cobbler ala mode gets my vote. Thanks. Everybody take care

We have a winner. Sorry, we don't provide room and board, only transportation from Amtrak to downtown Effingham and back. Otherwise, you are on your own. Budget constraints and stuff, you know... I had a friend, now deceased, who knew Fats Domino when he lived in New Orleans. According to him, there were quite some parties going on while he was there.

....With the terrible floods in New Orleans several years ago....I remember seeing "Fats" being rescued from his home via boat.  {On TV of course}.

Tom - your sig quote reminds me of the old saw (undoubtedly coined by a woman) - "If a man says something and nobody hears him, is he still wrong?"

Raining right now.  Hard to say what'll happen later.

Got to work this AM and computer didn't want to work (like me, but that's a different story).  Tech took a look at it and discovered it only had a half a mind (one stick of memory went bad).  It's working now, but should be back to normal Friday...

Off to other things...

No rain in sight here today....Beautiful clear skies and sunshine and mid 70's temps now....Grass has greened up really nice because of some rain we finally received last week.

Corn and soybean crops seem to be at their peak now. For as dry as it's been for sometime, I really don't see how they appear to be so nice and fully developed.  Soybean fields are a sea of green.

Tom, you'll be glad to know that Walt (Mutt) and I have fired up the grill, and now on the warmer bar are steaks (t-bome, sirloin,  ribeyes) along with grilled "baked" potatoes and corn on the cob.  There is also:  green beans, brussels sprouts, broccoli w/cheese sauce, potato salad, cole slaw, baked beans and macaroni & cheese.

I did get the tomatoes picked from the garden.  Nice round, red-ripe cherry tomatoes.  Everyone enjoy your meal, and have a great afternoon, staying cool and take care.

Hmm, since I'm the assistant "Lizard Scorcher" in charge of the "Grills" here, you might want to be very careful about comments like that. CW & Sarah got me a VERY large meat fork to use at the grills, and I'm Not afraid to use it!! Smile,Wink, & Grin

As we slipped by our McD's parking lot {right beside the Frankfort line of NS}, early this evening....we watched a 3 six axle GE power set coming in from the west and make the drop of a cut of cars {as is almost a daily routine on nearby siding}, and work back and forth to get  the job done.

That really backs up traffic there on a busy thoroughfare, but they cleared it rather quick for what they were doing.  Had a Union Pacific engine leading and it sure did have a sad sounding horn set....Sounded like just one and a half horns were actually working.  The rear engine looked rather new of NS origin and I'm wondering if the crew wished that would have been in the lead.  Lots of grain cars and surprisingly a lot of box cars.

Good Thursday morning, everyone.  Hope you all had a very good night, and will have a very good day today.  We're currently have a temp of 72 degrees, going for 89 again today, with plenty of hazy, hot and humid conditions.

Lance (Railfan1), Sign - Welcome back!

Coffee, juices, iced teas, lemonade and hot water for tea are all freshly made, and the tea and lemonade are in the fridge and some in the cooler.

Breakfast this morning:  bagels, bear claws, and a big breakfast of sausage, bacon, scrambled eggs, hash browns, homemade buttermilk biscuits w/sausage gravy.  (yeah, I woke up very hungry this morning).

Mookie, how about a stroll around the garden to the rockers and other lawn chairs, for a cup/mug of coffee?

Everyone have a good morning, keep as cool as possible today, and take care.  OH!  Does anyone have any requests for lunch and supper today?  If so, please let me know.

Mookie is fresh out of suggestions for just about anything.  However, I do enjoy chicken/apple/pecan salads or sandwiches, club sandwiches, and chicken oriental salad. Use some home grown tomatoes for the chicken/apple/pecan salad.  Yum!  I have some homegrown cucumbers - no decorations needed, just eat them raw and then have a funny smile all the rest of the day.

And while I really am not a big chicken fan - orange chicken for supper is always good - like they make at or used to make at Applebees.  It has gotten so expensive, we rarely go there any more so don't know if they still have that or not.

Another favorite that I haven't had for years is gazpacho!  On a hot day, that is so good.  Maybe key lime pie to go with it?

mmmm....

Clubs are always good - and another use for those fresh tomatoes!

One of my cousins is raising itty-bitty cucumbers.  Boy, are they good!

Key Lime Pie.  Any time!

Lovely day to all!

Curious question to CW: if you say American potato salad, are these your ingredients?

  • 5 pounds red potatoes
  • 6 eggs
  • 2 cups mayonnaise
  • 1 onion, diced
  • 2 green onions, thinly sliced
  • 1 small green bell pepper, seeded and diced
  • 3 stalks celery, thinly sliced
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  •

Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

Is it this?  Very tasty, mmmh. Yummy, so to speak!!

I'll now give you a recipe for traditional Vienna potato salad. You need

1 kg potatos, 1 red onion, a little white vinegar, some oil, salt, pepper (if you use onion salt you will want to add a baby spoon ful of white sugar too).

Don't cook the potatoes too long, they should still be firm, after cooling cut them into slices.
Add small onion pieces. Mix a marinade by using vinegar, oil, salt, (sugar) and pepper and pour it over the salad. Stir a little (cautious so as not to brake the potatoes) and let it rest for an hour or two before serving (normal room temperature, no special cooling). This will do for 4 servings.

Very hot here again, 92 today, forecast 94 for tomorrow and then some rain for the weekend and much cooler.

Have a nice day and good appetite,

    Gerd

Mom (and thus I) generally uses plain old spuds (as opposed to red potatoes).  Peeled after cooking.

She also usually uses Miracle Whip, about which people tend to hold pretty strong opinions on, for or against.

I've been known to include some hot/brown mustard for a bit of zip.  Don't recall if I saw radishes listed in Gerds version, but they're good in season, too.

Our local convenience store adds bacon to theirs - a tasty modification.

About the best potato salad I've had (other than Mom's, of course) was at a casino in Las Vegas where I was attending a conference.  It was made with red potatoes, but I don't recall what else was in it, and the key would be the "sauce" they used anyhow.

Regardless - I rarely turn down potato salad if it's offered...

Panda cage?? What's that all about??! It reminds me of a story I'd heard a long time ago.........

One morning the three bears were sitting at their breakfast table, eating their porridge. When all of a sudden, this third bear comes barging into the house, he didn't even bother with knocking on the door. He sits down at the breakfast table and he grabs Papa Bear's porrige and he snarffed it down. Then he grabs Mama Bear's porridge and he snarffed it down. Then he grabs Baby Bear's porridge and he snarffed it down. Then he pulls a pistol, points it toward the ceiling and pulls the trigger........BANG!!!! Then this uninvited bear gets up from the breakfast table and walks out of the house.

After a moment of stunned silence, Baby Bear looked at Papa Bear and said, "Papa, what was that?!" Papa Bear responds by saying, "That was a Panda." Baby Bear then looks at Papa Bear and says, "Well, what is a Panda?" Papa Bear then says to Baby Bear, "There's a dictionary on the shelf behind you, son, look it up." Baby Bear reaches for the dictionary and proceeds to look up the word "Panda". Papa Bear says to him, "What does it say about the Panda?" And the following is Baby Bear's response......."A marsupial indigenous to the rain forests of northern China. It eats, shoots and leaves." (eats chutes and leaves)

Gerd, my mother's recipe is similar; but here is her recipe, that I always use:

12 to 14 medium red potatoes

    2 hard boiled eggs

8 to 10 pickles (I now just use sweet pickle relish, since I no longer have access to home-canned sweet pickles)

    2 to 3 Tbsp mustard

4 to 5 Tbsp Miracle Whip salad dressing or mayonaise

    2 tsp celery seed

    Salt to taste

Cook potatoes until done (still firm, not getting mushy).  Boil the eggs.  Cool potatoes & eggs.

Dice potatoes and eggs.  Add remaining ingredients and mix well.

Sprinkle paprika over top of potato salad.  Chill until ready to serve.

I will eat potato salad made with other potatoes, but the red potatoes seem to give the salad a better taste.
