Walt, I know, my Dad was listening to it on the radio (no TV coverage for some reason) and I heard it from him. They need five duplicates of Ben Sheets if they ever want to get anywhere......

Dave, Etuofee is really really good. I have an aunt that lives in New orleans, and we have some every time we go. It's like a suop but a little thicker, and it's served over rice. As mentioned above, it's got all sorts of shell fish, shrimp, crawfi***ails, oysters, ect. It's alot like a thicker Seafood Gumbo, if you know what that is........

Sipping a nice cup of cappuicino as I right today, I needed a pick me up. Local came again last night. We had the fan on, as it was hot, and the radio on while watching them for about an hour, and the battery died when we tried to start her up to go home. Luckly my Dad work about 2 blocks from there, and he has Keys, so he went and called my mom from there. Got here jump started and on our way. It was kind of nice though, I got to watch the train switch the Plastics company for another half an hour.[:D]

CW & I JUST got a book in today,from Kalmbach.

It is through "Classic Trains" It's entitlled " GM'S GEEP'S"

I know alot of people don't care,but for me this was a great thing.
Even CW looked through it.

Crawfish etoufee (ehh two fay )
To pronounce it like a cajun, fill your mouth with marbles and try to say
"Hey Today"

Looks gross , tastes like heaven.

1/2 cup oil or margarine
1/2 cup flour
2 1/2 cups shrimp stock
1 large onion(sweet) chopped fine
1 large celery stalk, chopped fine
3 fat garlic cloves, minced
1/2 cups crawfish fat(substitue 3/4 tablespoons crawfish stock)
1 tablespoon lemon juice
1 teaspoon salt(omit of using crawfish stock, its real salty already)
1 tablespoon parsley
1/2 teaspoon cayenne pepper(careful, its HOT)
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 bay leaf
1 lb frozen crawfish
2 large scallion tops, sliced

Lots of white rice

Make a medium dark roux by whisking the flour into the oil over a medium heat and cooking strring constantly until the mix is the color of chocolate.

Add the onions, celery and garlic, saute over medium low heat untill tender(the onions will go clear).

Slowly add the shrimp stock, and bring to a boil.

Lower heat to a simmer, add lemon juice, crawfish fat or the substitute and the rest of the spices.

Simmer 15 minutes, then add the crawfish, bring to a rapid simmer for about a minute, then lower back to a low simmer, add the scallions, then finish simmering till the crawfish are tender, about 10 minutes.
Serve over white rice.

I have no ider if you have crawfi***here, (mudbugs), but you could substitute shrimp and shrimp stock instead.
Every once in a while, I add a 1/2 cup of red wine to the mix instead of the stock.

The etoufee is a thick sauce, very rich, and very aromatic.

If you dont have crawfish, use shrimp.

Sounds hard to do, but its not, and tastes great.
Do not freeze leftovers(if you have some), it dosnt keep.

My brother in law taught me this recipe, is a Cajun, from deep in the Louisiana swamps,.
He speaks english, I think, but I learned this one from watching him cook it a few times.

If it turns out too salty for your taste, substitute a medium red wine in place of the crawfish stock, and leave out the teaspoon of salt.

Noah and tree68, thanks for info [;)] - does sound interesting...sadly, [:(] I'm allergic to shrimps, and a few other things, so I guess I might have to pass on the efoufee...can't risk it...a few years ago I popped a shrimp in my nouth and suddenly got a real bad tingling sensation [:0] and my mouth sort sweleld up a bit - horrible feeling..[xx(]...allergies are such a pest [:(!] oh well! I can enjoy fish! [:)][:p][:p]

Dave--you can also make it with stuff you are not allergic to, like possibly chicken (which I hear tastes just like cat), and it'll go down soooooo smooooooooooth! I think we could find a version that you could handle without having an allergic reaction.

The real problem with stuff like ettouffe is if you eat too much of it, you start to look like Chef Prudhomme!

Ed - thanks for the recipe! Worth taking down...I'll take drephpe's suggestion and just substitute chicken.

I reckon we do get what you call crawfish down here, except, we call them Moreton Bay Bugs. I think the name Moreton Bay because our "Downunder" version of bug is primarily found in Moreton Bay, the bay beside which the shipping port for Brisbane is situated.

Follow drehpe's suggestion, use chicken, and chicken stock, works great.
Do not use beef, dosnt work, I know, I tried, yuck.
Did use chicken, not as flavorful as I was expecting, but very good anyway.

Sorry about the reaction to shrimp, your missing out on one of Gods greatest gifts.

I go shrimping with a friend every once in a while, their good boiled just the way they come out of the water, Gulf Jumbo with a little butter sauce and garlic....

If your Moreton Bay Bugs look like little lobsters, thats the guys.

Man, if I had known there was gonna be math, I'd a practiced! Here in eastern Indiana, we don't change time, alot of people think we should, but I have no desire to mess with VCR's, DVD's puter etc. The new ones I hear, do it themselves, but i don't have new ones.
Modelcar- As soon as I saw the Pizza King comment, I knew where you were from...I'll have to bring in a Royal Feast for the folks at the Diner, and an Art's Around the World and some roast beef with peppers for you all to try..
dharmon and locomutt- I think the important question around here isn't when WE can hunt Lurks, but when THEY can hunt us. Nasties they be, and if they get into that shuttle going to the moon with the coffee, well, there goes the solar system.
edblysard- It's a no go on shrimp, used up all my chicken setting Troll Traps, could i substitute Lurk? And what would that ratio work out to? 2 Three Ringed Lurks for one Rhode Island Red, if I remember right. I've misplaced my Lurk Cookery book.
Kozzie- lets seeeeee, 04:25 here on Tuesday morn, if I figure this right....get my slide rule...where's that sextant....RIGHT! That makes it 36:30 last Thursday at your locale. See guys, not so hard. As soon as I get that Lurk eetoufee recipe, I'll pass it along.

Here in Philadelphia PA., back in the 1950 to 1970's there was a coffee shop in the old Broad St. station and the 30th Station. There was the Savory. for which people came and had there business lunch there. this space in the 30th St. Station is now a hamber shop. bring back the 50's.

That's easy......The Rules of Engagement clearly give the individual or unit the inherent right to self defense, using reactive force, appropriate and in reasonable proportion to the aggressor to achieve a mission kill or force a termination of the attack, up to and including destruction of the attacking force.

I would presume based on that, lurks, trolls and snipes...all of which are considered hostile, a pre-emptive shot is appropriate. As long as you don't hunt them for sport out of season....

Had a co-worker go camping in the Nebraska sandhills. She said they had Sandhills bacon (the bacon got dropped on the ground after being cooked, so they washed it and tried to eat it - still too sandy: she grabbed butter flavored Crisco for the toast, and thought she had instant coffee, but had regular instead. Microwaved the water and put in a rounded tsp. Grounds woke her up - a lot! My advice would be don't go camping with her, unless you really like adventure!

Phil....Yes, I suppose the Pizza King does give it away....We're here in Muncie. But on the pizza, you can get the similar product in Florida but it's under the name of "Sir Pizza". And on our time ver. Kozzie's....I believe he is just about 16 hrs. ahead of us. So now as it is close to 11 am. here, I would imagine Kozzie is sawing logs.
