I voted two, however I currently have 5 FP45s. Out of the 5, I will be selling two of them on Ebay after I detail two of the Silver & Red Warbonnets and repaint and detail one into the Dark Blue & Yellow scheme (non-warbonnet version).
I don't want to have any more than 25 locomotives as while more may seem desirable, maintenance headaches creep up if long time periods occur between runs. A few years back I winded up selling some units because of this.

I've got 5 Alco C-424-425's. I consider them all the same, as the differences were small.
my display fleet has a bunch of 40-2's, maybe 8-10 of them. But they get no run time. And unless I get busy, neither will the Alcos!

I own two each of the following:
GE 44-tonner (both SN)
Single-truck Birney (one will be SN, one PG&E)
GP-7 (one WP, one SP)
I own two more GE 44-tonners, plus I have an extra GE 70-tonner and SW-7, plus four or five Brill trolleys, but those are slated for conversion to as-yet-unbuilt trolleys or freight motors and thus are not counted in the above totals.

I model the modern BNSF and UP in the West.
My biggest "fleets" are

15 SD70M (UP, SP and a NS plus 5 SD75M/I)
15 Dash9-44W (AT&SF, BNSF, C&NW, SP, UP)
11 SD40-2 (BNSF, C&NW, UP, UP-MP)
8 SD70MAC (BN and BNSF)
