I fell behind badly on my to do list due to thanksgiving. For instance the cover for the front of the layout, That will have to wait until the benchwork is finished. The benchwork will have to wait for more wood. The wood etc....
Holidays are a great time to work on the trains but at the same time not so great.
Wiring for 3 sections of my layout.
Build last main section and lift bridge section.
Start doing scenery (finally!)
Several rolling stock kits need assembly.
Install DCC decoders on the rest of my locos
Rebuild/superdetail an old GP30 model
Install sound in 1 or more of my F-units.

Paint entire bare benchwork a suitable flat color.
Hang curtian along front edge to decorate and hide stacks of boxes.

I've taken a 4 month sabbatical from layout building, but now that I'm back to school, I'm thinking I need to finish benchwork, go to Lowes and pick up some foam board to add to the benchwork, but more 2x4s, buy a DCC system, convert 5 non dcc ready locos to DCC, start laying track, add scenery, build 2 walthers kits (lumber yard and NL & P substation), buy some center beam flat cars, but a new gp38-2, wire the layout, weather about 2 dozen pieces of rolling stock, build a set of spine cars, etc. I decided to take my time

Finished stripping the lettering off of two Atlas NE-6 Cabooses with the Joe's decal remover.
Keep moving forward on new mine location, trackwork and town site.
Complete test loop track.

Mines fairly embarassing.
1) Finish the woodland scenics Subterrean Scenery kit that is a little set to do some scenery with. I got it all plastered out, track down & ballasted, and then just...stopped. Not quite sure why, but has been maybe 7 to 10 months now since I touched it other than to move it.
2) Finish the free form track laying I was doing on a small posterboard for a dual loop configuration just to get the hang of roadbed and ballasting and a few other things.
I kinda stopped working on it in march, and never picked it up again. I bought wood for benchwork, cleaned a room out (which is now stacked with boxes and stuff) and never finished what I started.
I'm weird like that.
Interestingly enough, I just wrote a to-do list a couple of weeks ago. Lots of little things on it that I can do "at my leisure", but the big ones are:
1. complete an industrial spur and the building it runs to
2. check the weight and coupler height of every piece of rolling stock
3. Lube / check coupler heights of every loco
Items 2 and 3 are huge, and there are few things I hate more in this hobby than fiddling around with couplers...and as time goes by (and my eyes get worse) that hatred only deepens.

Moved and rearranged the workbench, shelving into thier possible pernament positions.
Cleared the room middle and working on one corner to clear the tools out of there.
Goal, one open cleared room for painting, new carpeting to match house.
Start painting benchwork flats with cheap tan latex.
Continue with workbench structure building for town.
Make plans to acquire lumber and additional tracks, switches and associated devices ... yay.
Forge ahead with decisions on which structures to keep, what to sell. For example my Mine requires about 2x8 to switch effectively and if I cannot find it, I will sell it and stick a few coal barges there on docks and cranes instead. (Anyone have good Clamshell buckets in HO?)
Make decisions on final wye configuration and location of staging.
Negotiate use of Fire Chimmney Flue channels though one wall for staging access.
I have about 5 hours of household chores to do before I can reward myself with any model railroading activities. I make it sound like I always put these things first but actually have put them off as long as possible.
When I finally get in the garage(layout room) I will install a siding for a citrus packer. I need to do some patching and rework on some scenery to make a section removeable for access to a couple of turnouts. I will remove those cars that are not in my plan and move the trucks(couplers + metal wheels) to some newer purchases that need upgrading. Then I may be able to run some trains.
On Sunday I am due at a friends for a work session on his layout. Its just track and benchwork. We are currently working on bridge abutments and tunnel portals.

I'm a bachelor father for the week while my wife visits her parents. My daughter is a very independent teenager, so I'll have lots of time. I've got the shell off a P2K GP-9, and I'll be off to my LHS in an hour to get a sound decoder for it.
There are a bunch of Jordan vehicles waiting to be assembled, and after I do a bit of weathering, I've got to Dul-Coat some stuff before the rain hits this weekend.
It takes an iron man to play with a toy iron horse.

Paint benchwork top.
Get legs for the top.

Run trains
Redo all trees
Enjoy running trains some more....
