Definitely the Kato 2-8-2!
Other favorites, in no particular order:
Con-Cor 4-6-4
Bachmann Spectrum 2-8-0
The Atlas/Kato Alco Road Switchers
Kato made a small boxcab electric. Toylike, but interesting.
Life-Like SW-1200
Life-Like SD-7s

High-nose RSD-15, though the N-scale version of this (long out of production) is a poor quality early-N-scale engine, so I am working on repowering them using Atlas FM Trainmaster chassis.
Kato SD-45 ranks up there, my favorite EMD engine.
I will throw in a second for the Con-Cor 4-6-4, even though I don't run steam: this was a superior-quality engine long before Kato-type drives became the norm, and is still a great runner.
Life-Like FA-1, just an alluringly heavy brick of an engine.
Kato RS-3, my first N-scale deisel ever and still top-quality.
