The only thing I can say is get insured by someone who knows about toy trains. There are lot's of insurances for collectibles, but toy trains don't have fixed values. So get one who really pays for the collector price if things get stolen or whatever.
In my insurance for the house I have a 5000 euro's limit involved for collection, so toytrains are also covered. The only thing is that no-one knows how serious the are about the value if something happens.
