I am riding the rail trail in Fonda NY which parrells the NYC mainline and I was told that Conrail had parts running until the 1980s to serve the Beechnur baby food plant and there were even Amtrak trains on reroute thru here in Canajahorie NY

It's been a long time for the portion west of Albany/Selkirk.  There is one of those flyover videos on YouTube that goes down the old West Shore route and you can see the development on the old route in a great many places.  My suspicion is that through service was essentially redundant long before the four-track Water Level Route was converted in most places to double-track with CTC in the early Fifties.

First place to check is the employee timetables at

https://www.canadasouthern.com/caso/ett/timetables-nyc.htm

I see they have a 1958 for the whole territory west of Albany, and they've got some earlier for each piece.
