is their a train simulator  game that you can build a train to run over a route using the number of cars and locomotives  you want and tonage example building a ethenol train with 3 locomotives 100 cars and tonage of 11000 tons

It is possible on msts, but the consist editor will not tell you the tonnage of the cars. You would have to know how many tons each car is and calculate your tonnage from there.
