layout ideas for newbie

Okay - I am trying to replicate my trains from the 1950's within budget and limited space.
I purchased the Lionel Pennsylvania Flyer set with the fast track. It measures 60 x 40. With limited space, we are building a table and I want to be able to expand to 72 x 72 . What kind of fast track layout will fit this table without it being boring and any ideas on what materials should be used? We are thinking of using insulation boards (styrofoam) and 2 by 3 boards. Then I was wondering what covering I can put on top for a realistic ground cover, etc.
Thanks[:X]
