I have 3 questions regarding switches for Atlas under the table machines?
1. Can I use toggle switches to control them? If so which kind?
2. Can I wire LED's to the switch so I can visually see which lead I am on at the turnout?
3. Can I use 1 switch for 2 turnouts, as in the case of a a slip between two main lines?

Yes, but they have to be momentary contact types. You want a single-pole, double-throw momentary (SPDT-MOM) toggle. The toggle handle will spring back to the center position when released, so the switch machine is only energized while you're holding the toggle over.
2. Can I wire LED's to the switch so I can visually see which lead I am on at the turnout?
Not without providing additional switching contacts, for example by using the Atlas Snap Relay along with the switch machine. See my book, "Easy Model Railroad Wiring," page 99, figure 9-21.
3. Can I use 1 switch for 2 turnouts, as in the case of a a slip between two main lines?
Yes, as long as the power supply has enough capacity to operate two switch machines simultaneously.
