I just plain want things to happen faster.

I understand that you want to please the kids, and I think that's wonderful. Maybe this can be turned into a positive thing and teach them patience. Good things come to those who wait. I really doubt that they will lose interest during the delay. You'll know if they stop bugging you. Do what you can and don't worry about it.

Maybe the best thing is to let them see that you are working on it. Show them that it does take time.

On the other hand, my kids don't look at my layout every day, that way when they do look, they notice progress.

Another option is to create small projects that they can do themselves. Little scenic things, like making trees, or crates, or pallets etc.

You know your kids best, pick a strategy that you think will work to keep them involved, while you do what needs to be done.
