I've been making Elote Street corn for about two years now. As Rachel would say — "Delish"
I use cotija cheese, (Aldi has a close substitute) fresh cilantro and a bit of chili powder. You can use plain frozen corn off the cob but it is best if you brown it a little in a skillet first.
Play around with it to your liking. Miracle Whip or plain mayo (I use Duke's).

We grill our corn on a hot BBQ without any husks left on it. It is delicious!!!!!!
We spray the corn with Pam cooking spray and then sprinkle on Old Bay seasoning. I like a lot of the Old Bay, but Dianne prefers a lighter application. If you do it right, the corn chars just enough to make it sweet and savoury. You have to turn it frequently because once the kernals start to char, the whole side of the cob can burn very quickly.
In my humble opinion grilled corn is much better tasting than boiled corn, and I like boiled corn!
Give it a try! You will discover a whole new way of doing corn on the cob.

Amongst the stuff was a black painted wooden propeller that had obviously suffered a prop strike, which was destined for the rubbish bin. I asked if it was Ok, if the back of my ute was a suitable bin, and was told yes, take it away.
One of my prized posessions, Bear, is a wooden prop I grabbed also from a trash bin. Mine doesn't have the clock, sadly. (How do you tell the time when she's spinning so fast?)
Mine doesn't have the same history, though. I was driving by my sis-in-law's road and saw it sticking out of a rubbish can while a moving van was in the driveway. Didn't take me long to spot it and toss it in the truck

Judy's sister Barb shipped us this super fancy ice cream on dry ice for Christmas last year There was five different flavors and the stuff was phenomenal. Judy had to guard the freezer with me in the house. If shipping ice cream is doable, I don't see why mayonnaise can't make it. Strikes me kinda funny, I'll be spreading some good Dukey on my sandwiches soon

All this talk of corn on the cob is making me despondent. Since I wound up in Emerg Feb/15 with a diverticular bleed, no corn for me or anything with seeds. The little shells on corn kernels can get stuck and cause an infection.
All this bbq talk has resulted in my going to pick up some prime rib burger patties. They make the best burgers I've ever tasted. A couple will be on thr grill tonight even if there are showers.
I was up at 5 this morning as my wife had her annual check up at 7 am. It is my turn tomoŕrow.
We will have to carry aĺl those plants we bought down to the basement tonight as we are supposed to get frost tonight. They are in trays but still it will take at least a dozen trips.
I want to run the RS3 today and then it will be time for running steam. My roster is now 80% steam. I'm slowly going backwards in time, maybe a little wishful dreaming on my part. Sure miss Robbie.

They just finished it up, and I paid the invoice. All done. The new door is beautiful. It is all white and clean. So much better than the old brown door.

I had never heard of Duke's either until my sister gave me a jar. I was born and raised on Miracle-Whip and still use it for most things (especially egg salad sandwiches) but I do like the Duke's on BLTs and turkey club sandwiches.

Got my deck painted in 2 hours and then had a plumbing call while I was cleaning up.
There's good plumbing days and bad plumbing days. I inherited some handy hacks botched job and had to redo everything. And then they wanted me to take care of the bathroom drain as well because that was jacked too. It wasn't an early day off, but ya gotta keep them happy.
Actually I should be very happy I rarely ever have to leave the building for side jobs anymore.
Yeah, Hudson Road is only about 20 minutes from me Ed. That Walmart is not too far from Twin City handyman I used to subcontract for a lot.
I'm going to pick up some bacon, lettuce and tomato with some out of season Florida/Cali corn and have some BLTs with Dukes mayonnaise. And make my friend John's corn on the cob sauce concoction for the corn

Well the plot just got a little thicker this evening. After we see our grandson graduate from high school and we're already halfway there, Judy wants to drive down to South Dakota and see Mount Rushmore. It's a done deal. I always did want to see that in person and now I guess we're gonna.

You will like it. Be sure to drive around in Custer State Park. There are some impressive sights there.
As long as you're that far, two and a half hours from there is one of the neatest places in the U.S., Devil's Tower. It is worth the drive!

The temp is dropping and I made 24 trips downstairs carrying trays of plants. Good thing they weren't in pots or the ground. They will be there until Thursday.
Too cold and windy for bbq so will have to wait and see how it is tomorrow.

I know the feeling, TF. With my prostrate I get a plumbing call pretty often, too
I just finished up a "nasty" plumbing job at Dee Ann's late parent's house. Mostly drain work BUT a contractor already installed a bunch of CPVC and PEX which I had to work around with 2" and 1-1/2" DWV. Plus install two drain pumps and a shower pan.
Glad it is done. I sure love whoever invented PVC drain pipe and Fernco joints. I had to adapt to cast iron in a few places

Hi Ed,
Pam Olive Oil cooking spray is all that we use. We use a very light coating. The corn certainly doesn't taste oily. The only reason for using it is to get the Old Bay seasoning to stick better. The corn is tasty enough right off the BBQ so it really doesn't need butter, but if you are feeling particularly indulgent, adding butter makes it really rich!
Seriously guys, if you haven't grilled corn with the husks removed on a hot BBQ, you don't know what you are missing!! Old Bay seasoning makes it really tasty, but if you don't have Old Bay, just use salt, pepper, garlic powder and paprika. Rotate it regularly. It grills pretty quick.
Ed, I used to have that prostate problem too but my urologist fixed it. He took out my prostate. A side benefit of cancer.

What if you were to put the grilled corn kernals in a food processor and make corn soup? Would the corn soup be allowable in your diet if you were to chop it up finely enough?
