I was at a hobby show in Chicago 5 or 6 years ago and someone had built a 4 x 8 layout to show that a small layout can be done to a high standard. I think it was published in MR later in the year. Only things I remember were the table was walnut, it had a barn raising diorama and I think it might have been an Eastern RR maybe PRR. Any ideas on what issue it was published in and any other info would be appreciated.

That sounds like Dave Methlie's Stoney Creek HO 4X8 introduced in the January 2006 MR. The series continued for a few more issues that year.
