What style are you looking for?  Monitor roof?  Duckbill roof?  Bullnose roof?  Any particular prototype, or will generic do?

Roundhouse makes Overton (34ft) and Overland (50ft) series of wood passenger cars in RTR plastic.  Prior to Athearn, these were made in kits as well as RTR.  You can still find the kits through eBay and other sources.

Model Power, Tyco, and Bachmann have all made (and at least Bachmann still does) made generic wood passenger car models in RTR plastic for their Old Time passenger car train sets.  The Tyco versions were originally made as kits, too.  Tyco/Mantua made 2 separate styles - "Civil War" with monitor roofs for the General, and "1890s" with celestory roofs for the Canonball Express (later Rogers 4-6-0).

Rivarossi/AHM/IHC/Mehano I believe also had a line of suitable plastic cars.

Labelle makes accurate wood craftsman kit models of late 19th Century rolling stock in both narrow and standard gauge.

There are several small makers of accurate resin kits of 19th Century passenger cars.  Old & Weary Car Shops and Westerfield come to mind.

None of these except the new production Roundhouse RTR will likely fall off the LHS shelves into your hands.  But they are out there.

Silver Crash Car works also sells resin passenger car kits.  The 34' overton cars aren't reall 1880's cars.  The others mentioned are much closer.

I picked this one up at a train show. 

It's by Pocher, but MDC and a couple of others make very similar cars.  It's 48 scale feet long and was in service from the Civil War until the 1950's.  The Boston and Maine paint job was done with a rattle can of hardware store red, followed by DullCote to hide the decal film.   The B&M ran 60 foot versions of this car in commuter service well into the 1950's.

Like someone said, the Overton were not 1880 but look nice.

River City Railroad has a new four car kit set for $24.00, Baggage, Combination, Coach, Business. All unpainted.

Only two were ever built. I believe MDC/Roundhouse coined the term many years ago and sold then with different road names. Don't know if they ever put the real railroad name on any.

A combination and coach were the only two built.

I checked the river city and had some problems with the site, may be my new operating system.
 I check one of my LHS's and he had a couple Matuas but it was an earlier type.I suppose it is going to take a little work to get what I want. Going to check the other sites also.

You can find river city railroads on evil bay.  They are good kits but you will have to search for instructions online for them.  There are some parts i did not use as they were not depicted on the instructions I found.  They came with window glazing in clear and green for the celestial windows.  They come with the string to string up the trussing underneath.  They also come with all the hardware needed to mount trucks and couplers.  The couplers provided are dummy couplers.  Nice kits that fit well and not a lot of work to make look good.
