On this engine the couplers are mounted on the trucks. Since these are eight wheel trucks and a long engine, should the couplers stay on the trucks or on body? Also what is the smallest radius curves it can negate

The Athearn DD40 can easily run on an 18" radius curve. Unless you're going to have wider curves (around 24" minimum), I'd keep the couplers truck mounted to avoid derailments.
