I recently purhcased the Walthers 110' turntable (933-2851 - built-up kit) which includes the Walthers Turntable Control Box (933-2320). I have wired it accordingly and the turntable operates flawlessly as far as bridge operations are concerned; however, placing a DCC locomotive on the bridge results in the locomotive powering up (sound, lights) and instantly runs full speed, either backward or forward, depending on how it's placed it on the bridge.

I have the exact turntable you are talking about and have not had any problem like you are describing. It sounds to me like the DC power you are providing for the turntable control has also been wired to the bridge rails.
Here is a picture of the bottom side of mine. Note the orientation of the plugs.

On the green plug, the two wires on the left (white & red) are connected to the DC power supply. The two red wires on the right connect to your DCC track bus. Let's start there and verify that is how you have it wired up.

Along with Mike's suggestion, what locomotive(s) is this happening with - i.e. make & model?
Also, can you use your Power Cab to read the value for CV29? To do that, you'll need to do the following:
A locomotive that takes off at full speed in DCC can sometimes indicate that the decoder is operating in dual-mode. If we can determine the decoder and current value for CV29, we can tell you what value to enter into CV29 so that it only operates in DCC-only mode.
