This is how this section is now

And was thinking about changing to like this?

Or like this

Or even like this on this section?

And just park the 0-8-0

It looks like you're dealing with a beginner layout that is easily changed.  Any of your proposed arrangements are probably fine.  Take advantage of the opportunity to try various configurations and see how you like them over time, then revise again.  It's a good way to learn.

Since coupling on an S curve can prove frustrating, I think the configuration in your second photo is far superior to that in the third photo.  Both will give equal storage capacity, but the one I prefer does away with the S curve in the center track.

I think you are already feeling the pain at being stuck with some manufacturer's predetermined track geometry, so I'll skip my usual commercial for flex track and hand-laid specialwork...

I use bachmann EZ track And i have been trying to figure out if i could get rid of that s curve. But i haven't come up with a way of doing it?

Im using SCARM to rearrange the track. But i all ways get a section of track that dont line upSad

I'd go with the first option (2nd pic) because it will be easier to work with, though the second option isn't terrible.

The best combination of both initial ideas.  Well done!
