I have ridden the Adirondack 3 times, but never with a dome, so I can't answer your specific question. However, I have riden a few domes in scheduled service, and in my experience, even if you don't get into the dome right at the start, non-railfans will start to leave the dome after a while, especially since the scenery is not all that interesting in that part of the trip. More seats should open up at the Saratoga Springs stop, and anyway that is about the time that the scenery starts to get more interesting.
I am planning a trip in October on the Adirondack. I know the dome car is added on at Albany. Is it better to board the train in Albany or further East like in Hudson. How is the dome boarded? From the platform in Albany or are passengers transferred from the rear coach?
