Besides the Sunset, The Cardinal is the only other thrice-weekly train I can think of, and even there, there is daily coach service on the CHI-IND segment.  I would guess they would need 2 extra sets of sleepers and maybe some extra baggage cars, and an extra engine for each set.   Are there any other tri-weekly trains?

For the Sunset.  None.  Amtrak was ready to do it - daily Texas Eagle/Sunset with connecting coach train to NOL, but "forgot" to include UP in their plans.  In the end, UP asked for $1B in infrastructure to accomodate the extra trains w/o any extra delay.  It appeared to be an opening bid, but Amtrak just folded and walked away at that point.

I was wondering...how much new equipment (including non revenue and motive power) would be needed to bring all of Amtrak's tri-weekly trains to daily (including Sunday) service?
