The turkey shanks braised in Dogfish ale sounds pretty good to me. I cannot find Amtrak's recipe but here is another recipe that does include the onion. There is no bacon in this recipe but that could be added. The recipe I found calls for a bottle or two of your favorite beer. That certainly could be Dogfish.

A work day that begins at 5 am and ends at 11 pm sounds to me very much like the old days before Amtrak. At least the dining car workers don't push the tables together to sleep on at night.
Surfing around the web it is possible to find some dining car recipes from the old days. The food sounds good although the items on the menu seem more traditional then. However, one speciality on the New York Central was lobster newburg which is nothing to scoff at.
Article kind of fluff but does state how to prepare meals at 90 MPH.
