"I noticed a track heading North(?)into the mountains and another train heading East(?) towards Cajon."
The only line heading "North" is the line to Lancaster, Mojave and the Loop.
The line south is the old Salidad line (the original main) while the line that goes east is the by-pass that goes to Cajon as you have mentioned, put into service circa 1968.
I grow-up in Palmdale and at times still miss the sites... B-)

I was in S. CA last week and killed some time driving from Ontario to Barstow and I stopped at Palmdale to watch trains for awhile.
I noticed a track heading North(?)into the mountains and another train heading East(?) towards Cajon. What is the story? Both tracks were very busy the day I was there.
