I grew up not far from Bayview many years ago. At that time the interlocking was levered and there was a lot of traffic, both passenger and freight. I get east once or twice a year and still can hear the activity....there seems to be plenty still....
AFAIK...
GO transit runs trains through to Hamilton in the Morning and Evening rush hours, one or two trains EB/WB, I believe. Most service west of Oakville is by bus, although I understand some trains run through to Burlington throughout the day. Their online timetable is informative.
VIA passenger trains to Niagara Falls (via Grimsby Sub) and London/Sarnia/Windsor (via Dundas Sub)run 4-5 throughout the day each way, I believe, as well. Again, their online timetable is informative.
You know the story with freight....depends on what's being built...
Anther good place to watch is at Burlington West (south on Brant St from the QEW) where the Halton (to MacMillan yard) and Oakville subs join. Used to be a great place to see a lot of freight traffic and passenger traffic at speed,especially after the Halton Sub was constructed.
Another thought....
Last fall when I travelled GO WB to Oakville there was a lot of additional construction (3rd and 4th tracks being added) being done between Clarkson and Oakville and it appeared to be happening west of Oakville also, although I didn't get to travel that particular portion of the Oakville Sub. Maybe that work is still going on.

Bayview Junction is one of the busiest junctions in Canada if not North America I've read...Took my son on Saturday and there's a nice pedestrian bridge over the three tracks...but not much action other than the chirping of crickets and an old dog walking along the line...stood on that overpass for the better part of an hour before the hot sun got to us and we left. What are the best times to watch...evenings maybe better?
