I'd start by taking a bunch of pictures of a beer truck. Here's an old trick for coverting your pictures to usable scale drawings... Take a yard stick and paint the first and third foot sections red/blue/black or any other dark color. So, the yard stick will have 1foot of red, 1 foot of wood color (paint it white if you'd like), and another foot of red. Now, when you take your photos, put that yard stick in the photo. When your pictures are developed you can take your scale ruler and determine the dimenions of every item on that truck based on the one foot sections on the yard stick. If you want to make it easier on yourself, that the photos to a copy center (Kinkos, etc.) and have them enlarge your photos until one of the red sections is a foot long on whatever scale ruler you're using. It'll be easier if you pick a larger scale (1:4). (I hope I've explained this well. If anyone else has used this trick, please elaborate if I've missed anything.)
Next, find a truck that's remotely similar in body style and wheel base. Try the Walthers catalog. I assume you'll have to scratchbuild a new "box" for the truck with styrene. That might not be as hard as it sounds. Check the selection of Evergreen styrene at your local hobby shop. I'm sure they have some type of corregated styrene sheets that would look similar to the roll-up doors.
When the truck is painted, I'd go to Microscale's web site (www.microscale.com) and search for the beer brands. I'm sure at some point they've made decals.
I hope that's enough to get you started.
