jwilliam33: I use 1 3/4" on most straight tracks, center to center.
On some others, 2", or 2 1/4".
There's a couple of spote where I have small structures between tracks and only use 2 1/2" centers on those.

For HO I believe 3" center line to center line is recommended. It is what I use and it looks good.

I don't know what scale you are using, but for HO or larger, I agree. Check out the NMRA's webswite. There are specifications for track separation in a variety of situations for all scales.

What should my yard track spacing be? Its a single ended, eight track yard. 2.5" or so looks like a little too much.
