You could give Bob Hamm of the NMRA's Hudson Berkshire Division, in Saratoga Springs, a call (518-587-0743). That division encompasses Columbia County and he would likely know of at least NMRA members in that area. Although Columbia Co. is still pretty sparce on population there are two major clubs just on the other side of the Hudson in Kingston that you might also try contacting about local hobbyists.

Didn't find any existing clubs in the area we are considering buying a new house (and the market is full of houses with crappy basements) so I'm wondering if there is a club in the Chatham/Canaan area already, or enough interest in forming one. The old depot in Chatham looks empty, but the line beside it is quite active. Would be surprised if there isn't a handful of interested people in the area.
