Hey there!
I know that i have to screw the wires from my power pack down into N Scale track but the end of wire that goes to the track comes with a connector of some kind.
Do i have to cut it of?

Hard to be sure without seeing it, but I imagine that the "connector" is exactly that, a rail connector. It should slide on to the bottom flange on the end of one rail and the following section of rail slips into the other half.
Hope that helps, it's hard to be sure without seeing it.

It sounds to me that the "connector" you are describing is actually a rail joiner, and is placed at a joint where a rail joiner would normally go to connect sections of track together. This is a typical way to feed power to your tracks, and is designed to make it easy – so don’t cut it off.
Some people don’t use these and simply solder a wire to the bottom of a section of track, then run the wire down through a hole directly underneath. It’s probably the best way I’ve heard to completely hide feeder wires on a layout.

What type of track are you using?
If you are using Bachmann EZ track you attach a connector to a terminal / rerailer track. I'm not sure what type of connector you have, but the one I am talking about is housed in black plastic and is about 1/2 inch wide.
