I built a couple of very small N scale layouts that were able to be on the table when in use, and in the back of the closet when not.
I think what you are describing can be a lot of fun.

I googled “ho scale baseball field“ and one came up on eBay. Included concession stands. I think it is made of paper which you have to glue to a base, possibly foam board. About $21 or so.
Don’t know anything else about it.

I am a beginner with only two locomotives, two more on the way, a few beautiful ready-made Main Street buildings, and a 4x8 EZ track Oval on our dining room table. It all has to be removable if we ever have anyone over to eat here again. I'd love to have a baseball field but can't find anything ready-made that would look good. I just want a field, maybe even just an infield, and simple bleachers for a little league type scene. I could assemble the bleachers. Question, are those inexpensive paper printed baseball fields any good to start with, to mount on a board and add grass perhaps? Or do you know of any ready-made fields? Please don't urge me to commandeer a room in the house forever and build a permanent layout, not happening. Thanks for any (other) ideas.
