There are so many YT model railroading channels out there, it would be hard to keep track of them all.
A simple search will turn up many, and many more.
One that seems to be a favorite with some, is done by Ken Patterson, and it's called "Whats neat this week". Search and you will find.
I have no particular favorites, and search for YT's when I have a need to see a "how to", or something that interest me.
Podcast, I can't stand. I can't just sit and listen to a group of people talk. No thanks!
Model Railroader has lots of video content, although most you have to subscribe to, like MRR Video Plus.

I actually am not a huge fan of jim's stuff. They used to be high quality and detailed, talking about all the flaws in detail with experience with each engine (like a bug he found in the paragon 2 decoder after operating an engine for a few weeks). How it just seems like every "review" is just first impressions of everything, and everything seems forced. Id like to see more info of how they operate, any flaws with each model, and a tad more passion, but that's just my opinion. Dont get me wrong, hes still a great youtuber, but I think it could be better. Here's some I highly recommend. Although they dont model HO, they are still facinating and many skills they display can be used in HO.
1. Erics trains, very well done O Lionel/MTH O scale reviews. Love the formatting, although he doesnt bring much applicable to the table besides great entertainment and reviews.
2. Sam's trains, also very well done OO scale trains. A very critical reviewer, also watched more for entertainment and review value than actual any skills or info.
3. Norm Charbonneau - AMAZING PRR 3rd rail modeler. His skills in weathering and layout asthetic are on point if you like the industrial look. His videos are huge inspirational vids and he shows how he does all his work. He recently began talking about what he does to all his models to make them look so good. Very informational and inspiring (if you like PRR, or industrial look, or weathering, or etc).
4. Darth Santa Fe - also on the forums here, if you need any info/videos on repowering or regearing, he's the man. From powering cheap plastic static models, to bringing Hobbytown models up to date, he's the man if you enjoy mechanical upgrades/restorations in models.
5. NSmodeler24 - HO modern era NS modeler. Amazing work on the detail, weathering, lighting and accuracy front. Shows off his work in detail. Highly recommended if you like modern era stuff.
6. Vic Yoder - HO santa fe/ southern pacific 1960s era stuff. Just silent running of long trains on a beautiful club layout. Very prototypical stuff, with many long wide shots but each video starts to get repetative. Still, good place to replicate accurate ATSF/SP train consists from.
There's a bunch of other channels I sub to, including some of the manufacturers, SCL3618, TheSteamChannel, etc.
I also got a channel myself (Trainman440), although its nothing near any of the above.

TSG Multimedia anything he does with Jack Burgess is excellent on scatchbuilding, he also does layout tours, rail fanning, product reviews and really long panel discussions
Dan Cortipassi does good reviews and how to videos. Unfortunately he does too many show and tell videos where he and his wife unpack a box filled with locos and rolling stock that he has accumulated over the years. And he has lots of boxes
Jason Shron is a riot
Larry Puckett the DCC guy, has moved away from DCC and is doing more videos on layout construction and modeling.

I used to follow the second guy, but he didn't produce much.
I watched 10 sec of the first NRS8400 and subscribed. I also added a couple more I found in this thread
