Before you start the Coast Starlight (if you have it). The Kato Pacific Parlour Car "Santa Lucia Highlands" which was sold only on the Amtrak store some years back, now sold out. You could paint and decal an ATSF El Capitan lounge car.
Kato released new P42 with the old Phase IVb Superliners and the new Transition Sleeper, and baggage car a months back.
Consist: 2 P42, 1 Baggage Car, 1 Transition Sleeper, 3 Sleeper, 1 Pacific Parlour, 1 Diner, 1 Lounge, 5 Coach.
Amtrak America, 1971-Present.
Now they are using Phase V, to Vb.
Kato makes both the superliners and the GE P42 in Phase V.

The Coast Startlight used to run through my home town of Davis California (just west of Sacramento). IIRC, it started running with equipment inherited from the host railroads when Amtrak began running the train in 1971, first as an unnamed train from Seattle to San Diego. When the SP closed the West Valley line as a though route north from Davis in 1982, the Coast Starlight was re-routed.
As for a model train, for starters, the Coast Starlight ran in a variety of consists, starting in the beginnning with single level heritage cars. IIRC, the Superliners were delivered around 1979 and used on the Coast Starlight from that point going forward.
I only know enought to be dangerous, but KATO made a Superliner consist. You didn't specify which phase paint you want. The Superliner I prototype was painted starting with phase II, in the mid-1980's the cars were painted into phase III and in the 1990's phase IV and later...
Basically in order for people to help you, you need to narrow things down about in terms of time period. I'm pretty sure all of the Superliner era items should be available in N-scale. The F40PH's hauled the Coast Starlight in the Superliner era until some point in the mid-1990's when the GE loco's began taking over.
As for where, if the KATO cars have been out for a few years as I believe, I'd check major train shows for them. I see them regularly at the quarterly Timonium train show in Maryland for example (happens to be a show this weekend). I'd check major shows in your area as well as online vendors - you should know the drill if you are a shopper. =P
