I bought a used athearn rtr sd40-2 on ebay. I want to know the cv list and pinouts for the connections but it's an old athearn soundstraxx decoder and I can't find any documentation on it.

If the decoder is plugged in to the 9 pin connector, it's a completely standard NRMA pinout for the 9 pin, same as any other decoder.
As for the various tabs around the factory board, the track pickups and motor should be obvious. Fronnt and rear lights are usually in beween the track pickups at the front and rear of the board. The extras for ditch lights are where it gets confusing.

Now that I can see the pictures - what are you looking for? All the connections are actually clearly labeled on the board - see your first pic. RF - right front pickup, RR - right rear pickup, M+ - motor +, M- - motor -, SP+ - speaker +, SP- - Speaker -, etc.

I don't know what CK and V+ are though
do all soundtraxx decoders have the same cv list?
CK is the CurrentKeeper capacitor connection. V+ is the function common (+).
