Always good to ask....

I have two of the Walthers motorizing kits to run their HO walking-beam oil pump models.  The motors will run on up to 12V DC, but I like the operation/speed with one of my 5V  power supplies.

Is it ok to hook the power supply up to a terminal strip and simply connect the two little motors to this...I guess it is in parallel....?

Yes, hooking them in parallel would work fine as long as their combined current draw doesn't exceed the power supply's rating.
