You did not specify the period, so here is some general info:
check out the website of the german prototype and model magazine Eisenbahm Kurier, click on events and choose modell. The items are from the whole of Germany if I am correct and neighboring countries like Switzerland and France. I am not familiar with place names around Stuttgart so you have tio check them yourself on a map of the region.
Alternatively just take a train into the region and enjoy the ride, lots of modern trains run by a variety of operators. Stuttgart hauptbahnhof should be fascinating as well.
