Hi, Randy
One of the first places I like to look for all things U.P. is Utah Rails . net
Here's some of the drawings from the UP standards book. I didn't specifically see a signal tower in here but if you browse the site you may find enough information to get some ideas.

Grant tower may not be what you are looking for (Shared with D&RG) but some photos, anyway.

And another site with some good info and photos of signal towers:

Hopefully others will chime in with some more information,
Good Luck, Ed

I believe besides controlling Omaha Union Station, it had at one time the UP's Bridge Subdivision dispatcher office. The caption mentions Omaha Towers A and C being gone. Partially true. Their upper stories are gone, but the ground floor bases still survive and I believe have electrical gear for the signal system. At least C does, they even put a new roof on it.
If you can find a copy of "The Railroads of Omaha and Council Bluffs" by Kratville, there are pictures of some of the UP's towers in the area. At one time, UP had 2 interlocking towers on the Iowa side and 6 (including the 3 at US) on the Nebraska side in the Omaha area.
