Heelo, I just recently found a box full of toggle switchs, they have 6 screws on them, could these be used? how would they be wired to a switch, my Peco switchs have 3 wire from them, Red, Black & White, Thanks in advance!

You first need to find out what kind of switches they are - with 6 terminals, they probably are DPDT, but not necessarily. You can determine what terminals are connected to each other at each switch position by using an ohmmeter, a continuity tester, or even a battery, a couple-three wires and a flashlight bulb.
BUT - Remember for controlling turnouts, you need a switch that provides only momentary contact, so that you don't burn out the solenoids that move the turnout from points from one position to the other. You could probably check this out using the same thing you used above.
