I have tried both, and the layout I am currently building will be strictly cork. I find that it provides a more smooth and stable base for the track than the WS product, does not compress when/if you use track nails, and is more compatible with a variety of scenery products and techniques.

Both roadbed systems will work. Some folks have mentioned they can buy the W/S foam roadbed at a better price than the cork roadbed, The W/S foam roadbed will compress when using track nails - so something like caulk/glue may be better with it. The cork can be 'sanded' to a smooth surface and the 'bevel' can be rounded. It can also be tapered for a transition to your foam or plywood base quite easy with a Sureform tool. The foam will rip up from my experience trying to 'sand' it.
Myself, I use Homabed for my mainlines and cork for the sidings/spurs. A lot of this comes down to personal choice/availability.

I use Midwest Products cork and have been very pleased with it over the years.
I checked out the Woodland Scenics roadbed but did not care for it - but that is only my personal taste. Your question or a version of it was asked a couple of times before, and I suggest you do a search for it. As I recall, the results were something like the old (really old) Lionel vs American Flyer arguments of my youth.
