The "parts list" will vary based on among other things, the height of the modules you choose to build, the degree of cross bracing on the legs and wastage (warped wood, knots in wrong place, bad measurement/cutting, etc.)
I strongly recommend "How to Build Model Railroad Benchwork, 2nd Ed." by Lynn Wescott (and Rick Selby). It's available online here at Kalmbach or from on-line discount retailers.
Regarding the track parts list....I seem to remember a discussion of turnouts in which a special curved turnout or Peco brand was used in addition to the more typical items.

I don't remember seeing a specific material part list. However, there is enough information included in the original article (January 2009) to build the tables. I think some of the lengths will vary, depending upon how high you want the tables to be. The wood pieces included 1 X 2; 2 X 2; 1 X 3; and 1 X 4. The tops were made from 1/2 inch plywood. After the tables were assembled, they added a 2 inch foam insulation board and a facia.
If you get a copy of the article, you should be able to figure everything out.
