Is there are good website or book that has some guidance/measurements for laying out track? such as how far apart parallel track should be/tunnel entrance dimensions etc ( I guess for variation of Large scale 1:29, 122.3, 1:20.5 etc)

Do this, take the area you're using, get out your track, and start visualizing what will work. That's what I did without any fancy software and I've got a little railroad I was playing with the other night. I spent about 3 months to convert a weed patch into a garden railroad (well, the garden is still a little plain), but there you have it. If you have a box full of track and a deserving area without track you're missing out
