Has anyone had any experience using a dpdt mo-off-mo switch with the Aristo electric switch machine? The supplied slide switch uses AC voltage? But I want to panel mount my switches and I wonder if I can use dpdt switches and dc?

Sure.
All you need to do is reverse the polarity to the switch machine. It has internal limit switches to turn the motor off.

18 will suffice. 6 will also work.
