PERCH is great (walleye family) done up in crushed up Ritz crackers and beer batter, deep fried and downed with afew 12ozers.  Always done this on the shores of the St. Lawerence River the Canadian side up at Summerstown, Ont. about 1 hr SW of Montreal.  We even took the train to Montreal and saw a baseball game.  Had the milk run on the way back.

Walleye are great eatin'!  I also like Northern Pike pan seered in a cast iron skillet with some honey butter!  MMMMMMMMMM... for a good fight you can't beat a Large Mouth or Muskey, but the longest fight I've ever witnessed was in 1991 when fishing with some friends off Rockport, TX.  It was getting around 3pm and time to head home (we hit a school of sea trout? around noon and had around 8 or so in the live well), when the one guy got a hit... think it was around 9pm when he finally boated the 32 inch red fish!  Talk about fine dining!  We were too tired to even think of bars and pool that night!  LOL!  Can't beat frying fish, drinking beer, and playing poker with the fellas!

Lots of found memories with that crew... too bad the Army broke up the fun...

Walleye!!!!!  UMMM good.  Fished Lake Erie lots of times for them.  Also the NC Mountains too.

You're right Buckeye, I did forget about the Walleye. And when you do come back here to the lake we can get some of those chicken wings.

Chief, I-81 is is about 3 hours east of here. Western NY hospitality is great and we'd love to see you in our part of the state.
