Even though they are of "modern" vintage, the "Baby Madisons" look pretty good behind a 675. It has the right PRR boiler shape and nice proportions compared to the passenger cars. I usually run a couple of head-end cars, baggage-coach combine, and two coaches behind the engine.
Lionel has recently (two years?) re-released the PRR "Baby Madisions" and you can still find some around. Another option would be some original Madison cars, the recent Lionel re-releases, or the reproductions from Williams.

6465 tank car
3472 milk car
6656 cattle car
6414 Auto-loader
3461 log dump car
6465 hopper
6357 caboose
I may delete or add in one or two other cars, but this is fairly standard for me. All fall right in about the same time period as the 675 would have been produced, with the exception of the slightly newer 6414.
