Any ideas as to how to stack one layer of track above the ground level, in order to increase length? I understand I'll have to have to have two grades, one up then one down.

You could also have a elevated reversing loop.  Most of the elevation could be done with the Lionel elevation kits, one graduated set and one elevated.  The only problem would be the switch, but you could just build up the space below.
