quick question:

what are some good tips when changing out couplers on an n scale freight car

Have the right tools.
Use the correct coupler for the locomovtive you plan to convert. I'm assuming you're changing to MTL's.
Buy the MTL coupler tool kit (around $30) It will provide you with several sample couplers, height gauge, drill, tap, grease em, and instructions.
Set aside a workspace with a good lighting source. A magnifing glass helps. A head mounted one works best for me.
