New to the hobby

I have a O72 oval on a table 8'x 16'. I want to add a 2nd oval am I better off using O63 or O54. I would also like to change elevation, any tips on how gradual the grade needs to be, hoew high I need to go to allow another train to pass underneth ect.Any help would be great
