Depending on your accessories and power supplies, fixed voltage for switches, variable voltages for lights so you can dim them if you want, is a start. Postwar accessories with the vibrator motors may need variable voltage for optimum performance.
Hobbyists have used multiple transformers set aside for accessory use only, including non-train transformers like doorbell transformers, wal-wart power supplies (for LED lighting),etc.
Track activated accessories using insulated track sections may need special care when using separate transformers, to phase them with the track transformer if necessary.
In short, you can power up your accessories any way you can, with whatever you have, as long as they work properly in the end.

Hello everone. Iknow that this question has been asked many times, but refresh my memeroy.. How do all of you power your accessories? Do you use a transformer and use variable voltage side? I am just not sure how I want to power them and just wondering how all of you like to power yours?
Thanks
