One book that covers the beginning of Conrail and goes to its end is "The Men Who Loved Trains" by Rush Loving Jr. However the book's not Conrail exclusive, it covers the turbulent history of railroading in the Northeast during the 1970's and 1980's. However, it's a very entertaining read, one of the best business histories I've ever read. Really pulls you in!
Morning Sun Books has a number of Conrail titles. The books aren't cheap, but the quality's outstanding. I've never been disappointed with any Morning Sun book I've purchased.
