As a former NJ res, I'd have to say Princeton Juction was always a favorite, but that was back when it had low-level platforms and freight trains... still a beautiful place to watch trains though. Harrison NJ, also on the corridor, has lots and lots of passenger action, and the neighborhood is better than it looks, but it's still a rusty industrial area, so be careful. Bound Brook and Ridgefield Park are both great, as mentioned before. Ridgewood NJ was always a personal favorite, but it's not perfect for photography, as the platforms have fences between them. Hohokus is better.
