When I went on my NASCAR trip to the race in Homestead I tried alligator. It was like shoe leather. It was so tough and rubbery it was unreal. I have been told the restaurant did a poor job of cooking it or it wouldn't have been they way. I don't know because I have only tried it once so I don't have anything to compare it to.
